There's nothing more summery than a backyard Louisiana seafood boil. A picnic table lined with newspaper and covered with crawfish is a beautiful thing. But unless you're in New Orleans, the messy, eat-with-your-hands affair isn't so common, which is totally unfair to everyone everywhere else in the world. That's why we came up with these super easy, no backyard-required shrimp boil packets.

Instead filling a gigantic pot filled with 50 pounds-worth of seafood and potatoes, we packed individual foil squares with our favorite fixins—shrimp, red bliss potatoes, andouille sausage, corn, garlic and lots of Old Bay—and threw them on the grill. After just 10 minutes, everything is perfectly cooked and ready to serve straight from the packet.

If you don't have a grill, do not fret. As a New York-apartment dweller, I feel your pain. Luckily, you can bake this recipe in the oven too. Even in a nice air-conditioned setting, you should still serve the seafood boil packets straight from the foil. And it's only fitting to eat it all with your hands.
